Hands-on pasta making class


Do you want to learn how to make authentic fresh Italian pasta? Step by step, our resident chef Michele will prepare with you the most typical dishes of Italian cuisine, sharing his secrets, the result of years of culinary experience.

The class will end around the table, tasting your courses with a good glass of wine.

How it works


The class takes place in Riva’s living room, in the heart of our “home,” the duration of the experience is about 3 hours including lunch, which will be served in the living room or in our garden, in the shade of the veranda or under the large tree overlooking the pool.

Description


Michele’s class will enable you to learn how to make typical “homemade” pasta and try your hand to creating delicious pasta dishes at home as well. First you will select the best and genuine ingredients, paying special attention to provenance. After that, the chef will explain to you the correct use of ingredients and the appropriate doses while also revealing those little secrets that will help you in the preparation. Under the guidance of our friendly English-speaking chef Michele you will also learn different types of cuts and the correct cooking times. You will create accompanying sauces and fillings in case of ravioli or tortelli.

This class is suitable for anyone who wants to “get their hands in the dough” and have fun while learning.

  • Caramelized goat cheese with zucchini and traditional balsamic vinegar of Modena
  • Tagliatelle with fresh basil pesto
  • Ricotta and spinach tortelli with butter and sage
  • Vanilla yogurt mousse with strawberries and apple cider vinegar

When


Cooking classes are held on Saturdays , from 11.30 am to around 2pm (including lunch).

Classes are activated if they reach a minimum number of 4 enrolments. Otherwise, you will be offered the option to pay an additional fee for the exclusivity. Reservation required.

Our Chef


Resident Chef Michele Berlendis is the heart of RIVA Lofts’ kitchen. A native Tuscan, after attending a technical institute specializing in hospitality in Florence he worked alongside the chef Filippo Saporito at the starred restaurant La Leggenda dei Frati. After refining his skills he moved to Berlin where he worked at the leading Italian restaurant Boccadibacco. Upon returning to Italy, he began his teaching career by personally running the renowned MamaFlorence Cooking School where he discovered a passion for teaching and sharing the secrets of cooking with students. After a long and solid collaboration alongside the starred chef Erez Ohayon, Michele decided to take over the kitchen of Riva Lofts to continue in teaching and expressing his own cuisine.

Michele loves to experiment with simple flavors so that the taste of the wholesome ingredients he uses can really shine through. She reinterprets classic recipes to give them a personal touch.

Because we use only fresh, seasonal ingredients from trusted local suppliers and farms, the cooking class menu will vary depending on what is available on the day.
